Not to be confused with the macaroon [mah-kuh-roon], a coconut drop cookie, macarons are a finicky, french pastry cookie made with almond flour, confectioners sugar and meringue. They are baked and sandwiched together in pairs with a filling most often consisting of a buttercream or gnache and sometimes jam or curd. Of course, we like do things a little differently. We prefer to fill our cookies with our own dreamy guimauve.
